Fermentation: Controlled fermentation at 18°C and ‘sur lie’ for 6 months in stainless steel vats
Winemaking: Each variety is crafted separately. After short maceration and pressing, the must is left to ferment, partly in large oak barrels, and partly in acacia and oak barrique barrels, where malolactic fermentation takes place. The wine remains on fine lees for 8 months.
Appellation: Wine-growing Primorska region, Slovenian Istria
Location: Debeli rtič – marl and Eocene flysch
Colour: The colour of sequins with gentle shades of green.
Aroma: Intensive aroma with characteristics of acacia tree flowers and tropical fruit.
Taste: Very distinct and gentle with a mineral note, and an elegant structure and finishing with a pleasant bitterness of almonds.
Aging potential: 2 years and up
Food and wine pairing recommendation: Malvasia is recommended to be served with appetizers from sea fruits, pasta with lighter sauces, fish, and frittatas with asparagus.
