The hard cheese made of cow's milk and sheep milk is full of the characteristic spicy aroma and the flavour of the island of Pag and the Adriatic Sea. The cows that give the milk that is used for the production of this cheese never comes in touch with any industry. They live and graze on the highest point of the island of Pag and their only source of food consists of the plants and grasses rich of essential oils and vitamins that have a characteristic spicy aroma. On the island, you can find more than 250 different types of grasses and herbs, for example wild fennel and sage. This in turn gives the cheese its unique taste and quality. In addition, the cheese matures for at least half a year and longer in fresh air which is also very salty.
