A quarter of a piece natural KraÅ¡ki PrÅ¡ut - Karst Prosciutto matured 12 to 16 monthsÂ
The hand-cut quarter piece of Kraški Pršut - Karst Prosciutto is matured for at least 12 months.
Only naturally grown hams are used for the real Kraski Pršut, which is also the reason why the weight of the quarter pieces varies.
For many generations, the best pork hams have been selected at the beginning of December in the coastal Karst region and salted with coarse sea salt from the Piran saltworks. The Prsut hams are then left in this salt coat for three months and left to rest in the harsh air of the Karst winter.
When spring arrives, the hams removed from the salt coat are hung up in the wooden attic, where the pleasant cool perpetual Karst wind dries all the prsut slowly and deliberately.
Dry, cold wind from the mountains of the coastal land in Istria gives the ham its characteristic aroma and taste.
A whole year is required under the strict supervision of the enologist until the ham is ripe. Due to the distinctive dry climate, Kraski Proscutto has acquired its attractive rosy-red colour, noble taste and firm consistency.
"Kraski Pršut" is a Slovan ham produced in the Karst. It is a local speciality and is known for its distinctive taste and high quality. Kraski Pršut is made from pork and is dried in the Mediterranean air for a long period of time, which gives it its unique taste. It is a popular food in Slovenia and is often served as a snack or as part of dishes such as antipasti or sandwiches.
